About K-Dogam

Updated

K-Dogam is an illustrated field guide to everyday Korea, starting with Korean food. Each numbered entry covers a dish or an ingredient. Recipes include ingredient amounts, cooking steps and doneness checks; ingredient entries cover types, labels and storage.

Each entry brings together information from several published sources and lists the sources used. We do not present experiences we have not had as our own.

Who compiles it

K-Dogam is compiled by Nuri (누리), a pen name that means “world” in Korean. Nuri chooses the topics and approves every entry before it is published.

How entries are made

  1. Sources. We compare Korean and English sources, such as cookbooks, recipe sites, manufacturers and public agencies like Korea’s Ministry of Food and Drug Safety and the USDA, and write each entry from the findings. When sources differ, we record our choice and its basis in research notes. Amounts and times based on source comparisons or calculations are marked “about”.
  2. AI-assisted work. AI tools are used for research, drafting and proofreading. The plates are color illustrations generated with an AI image tool, not photographs of real dishes.
  3. Review and approval. Nuri reviews the proofreading results and approves each entry. After approval, final revisions, checks and publication proceed automatically. No entry is published without Nuri’s approval.
  4. Safety. Safety advice is based on guidance from food-safety agencies and on manufacturers’ product information. Each entry states its own cooking conditions, storage advice and allergy notices.
  5. Language. The Korean edition is adapted for Korean readers rather than translated word for word. Korean spelling and spacing follow the rules of the National Institute of Korean Language. Korean words in Latin letters generally follow the Revised Romanization of Korean, while established English spellings such as “kimchi” are kept.
