About This Dish

This kimchi-bokkeumbap serves two and takes about 25 minutes. Ripe kimchi and bacon are stir-fried with kimchi juice and a little gochugaru (Korean chili flakes), then mixed with rice and finished with sesame oil and a fried egg. The key is to cook the kimchi before the rice goes in and to break up the rice so every grain is coated.

The National Folk Museum of Korea’s encyclopedia links the spread of kimchi fried rice to cooking oil and frying pans becoming common in homes from the 1960s onward. It cites a 1965 newspaper recipe for a pot-cooked rice dish topped with stir-fried kimchi and a 1972 one that fries cold rice with pork and kimchi. According to the same encyclopedia, it became an everyday dish in the 1980s.

For other rice dishes, see bibimbap (mixed rice bowl) and gimbap (seaweed rice rolls). For another kimchi dish, see kimchi jjigae (kimchi stew).

FAQ

Do I need day-old rice?

No. Freshly cooked rice works too. Rice that was refrigerated holds its shape better, but use it within 24 hours after it was first cooked, and keep it at 4°C (40°F) or below until then.

What if my kimchi is too salty or sour?

Use a little less kimchi juice and taste before you add the rice. The Korean Bapsang and My Korean Kitchen recipes use ripe kimchi with a sour taste.

How do I store leftover kimchi fried rice?

If you used refrigerated rice, frying was its one reheat, so make only what you will eat. With freshly cooked rice, refrigerate leftovers in a shallow container within 2 hours (1 hour if the room is 32°C (90°F) or hotter), at 4°C (40°F) or below. Eat them within 24 hours after the rice was first cooked, and reheat them once to 74°C (165°F) throughout.

What can I use instead of bacon?

The recipe checked for this entry allows Spam or ham. Follow the package directions for cooking any processed meat.
